Fruit Salad, Yummy Yummy!

1 canteloupe diced into small pieces, 1/2 pint raspberries, 1 cup grapes, or you can use whatever fruit you prefer. Mix fruit together, drizzle 1-2 Tsp honey and 1 Tbsp lime juice.

Baked Maple Sweet Potato Coins!

Peel 2 very large sweet potatoes and cut into coins or coin halves. Lay flat on greased(with olive oil) cookie sheet. Cook in oven at 400 degrees F. for 30-40 minutes or until potatoes have softened. Melt 3Tbsp butter and 3 Tbsp maple syrup and brush onto potatoes with a barbecue or pastry brush. Then sprinkle with cinnamon. Bake for an additional 5 minutes to get the sauce all carmel like.

Chili with a secret!


#1. Saute in oil 1 chopped onion, 3 chopped garlic cloves, and 3-4 chopped celery stalks.

#2. Add one pound ground turkey OR one pound ground beef, cook till browned.

#3. Add 32 oz tomatoe sauce, 15 oz can crushed tomatoes, 2 cans pinto beans, 2 cans dark red kidney beans, 1/4 cup white or red wine vinegar (secret #1), 2 Tbsp chili powder or more if you like it extra spicy, 1 tsp curry powder (secret #2), 1 tsp cumin, salt and pepper to taste.

#4. Simmer for 2-3 hours or more.

Yummiest Fresh Salsa Ever!


INGREDIENTS :

10 medium tomatoes
1 medium onion
1 Tbsp minced garlic
1 small zucchini
1 small carrot
10-15 slices pickled jalepenos depending on how hot you prefer it
1 1/2 tsp salt
2 tsp cumin
1 tsp chili powder
1/4 pepper
1 Tbsp fresh cilantro or 1 tsp dried cilantro
3 Tbsp lime juice

DIRECTIONS :

Mix all ingredients in food processor till desired chunkiness.

Fresh Corn Black bean Salsa!

INGREDIENTS :

1 can corn

1 can black beans rinsed

1 can Rotel

2 small avacados diced tiny

2 tsp cumin

2 Tbsp lime juice

DIRECTIONS :

Mix all ingredients together.

Pumpkin Flax Seed Chocolate Chip Muffins.

Ingredients :

  • 3 tablespoon flax seed
  • 3/4 cup very hot water
  • 2 cups sugar
  • 1 can (15 ounces) solid-pack pumpkin
  • 1 1/2 cups apple sauce
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups whole wheat flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 2 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 2-3 cups milk chocolate chips (recommend Ghirardelli)

Directions :

  • Place flax seed in bowl and mix with hot water.
  • In a large bowl, mix the flax seed mixture, sugar, pumpkin, and apple sauce until smooth. Combine the flours, baking soda, baking powder, cinnamon and salt; gradually add to pumpkin mixture and mix well. Fold in chocolate chips. Fill greased or paper-lined muffin cups three-fourths full.
  • Bake at 400° for 15-18 minutes or until a toothpick inserted near the center comes out clean. Cool in pan 10 minutes before removing to a wire rack. Yield: about 2 dozen muffins.
Side note : The muffins taste the best after they have sat in a tupperware container for a couple hours, they get super moist!
